I'm sorry this update is like FIVE days late I have been beyond busy, but I set aside some time today to talk about last week.
I weighed in on the 14th April and I've lost another 2 pounds! YAAAS. So in total I've lost 6 pounds on my journey so far and I'm only 2 weeks in.
I am finding Slimming World to be such an easy diet to follow! Usually I've given up by now, I've never reached the 2 week mark of a diet! My 'diets' usually last like, 2 days. Haha!
There isn't much for me to report for last week, I followed pretty much the same menu as the first week. However I did try out an amazing SW recipe for mini quiches that I'll share with you now, here is a photo of how mine turned out:
Admittedly the ham did burn a little around the edges but I'd say that's not too shabby for my first attempt! They tasted bloody lovely so, wins all around.
Of course this blog wouldn't be any use to you without me sharing the recipe so here it is:
Ingredients:
- Diced Peppers
- Diced Onions
- Any other vegetables you prefer can also be added, I like tomato and mushroom!
- 3 eggs
- 150g of fat free cottage cheese
These measurements provided me with 12 mini quiches cooked in a muffin tray, adjust the quantity of ingredients if you want more/less.
Method:
- Mix 3 eggs and 150g of fat free cottage cheese together and whisk until combined as best as you can.
- Add in your vegetables, I also added chunks of ham because it needed to be used up.
- Pre-heat the oven to 170/190C Fan or Gas mark 5.
- Spray Fry-Light into the muffin tray and line each tin with wafer thin ham (this will act as the base for your quiche)
- Pour the egg, cheese and vegetable mixture into your tray.
- Put the tray into the oven and bake for 30 minutes until golden brown.
Voila! It's so so simple and they are absolutely gorgeous. What's even better, they're FREE food! So you don't have to feel naughty at all.
